Ingredients
  

For the donuts
  • 2 ripe bananas, mashed Use overripe bananas for maximum sweetness.
  • 1/3 cup melted butter Can substitute with coconut oil or unsweetened applesauce.
  • 3/4 cup brown sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon cinnamon Add more for a stronger cinnamon flavor.
  • 1/4 teaspoon salt
  • 1 1/2 cups all-purpose flour Can be substituted with whole wheat flour.
For optional toppings
  • 1/2 cup powdered sugar For glaze, optional.
  • cinnamon sugar Optional topping.
  • chocolate drizzle Optional topping.

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C) and grease a donut pan.
  2. In a large bowl, mix the mashed bananas with melted butter until creamy.
  3. Stir in the brown sugar, egg, and vanilla until everything is well combined.
  4. In another bowl, whisk together the baking powder, baking soda, cinnamon, and salt.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Don’t overmix!
  6. Spoon the batter into the prepared donut pan, filling each cavity about 2/3 full.
Baking
  1. Bake for 10-12 minutes, or until a toothpick inserted into the center comes out clean.
  2. Let the donuts cool in the pan for a few minutes before transferring them to a wire rack to cool completely.
Optional Glazing and Serving
  1. Drizzle with a glaze made from powdered sugar and water, or sprinkle with cinnamon sugar or chocolate drizzle.

Notes

Store in an airtight container for up to 3 days at room temperature, or refrigerate for about a week. They can also be frozen for up to 3 months.
