Preparation
- Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper or silicone mats.
- In a small bowl, mash the ripe bananas with a fork until mostly smooth. Set aside.
- In a large mixing bowl, beat the softened butter and sugar together using a mixer until creamy and pale.
- Add the egg and vanilla extract to the butter mixture, and beat until fully combined.
- Stir in the mashed bananas until evenly distributed.
- In a separate bowl, whisk together the flour, baking soda, salt, and cinnamon.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined to avoid overmixing.
- If using, fold in walnuts or chocolate chips gently with a spatula.
Baking
- Drop rounded tablespoons of dough onto the prepared baking sheets, spacing them about 2 inches apart.
- Bake for 10 to 12 minutes, or until the edges are lightly golden and the centers are set.
- Allow the cookies to cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
Notes
Store cookies in an airtight container at room temperature for up to 3 days, or refrigerate for up to a week. Freeze for up to 3 months.
