For the batter
  • 2 ripe bananas Opt for very ripe bananas with brown spots for maximum flavor.
  • 2 cups all-purpose flour Can substitute with whole wheat flour for a denser roll.
  • 1/2 cup sugar
  • 1/4 cup brown sugar
  • 1/2 cup milk Use non-dairy milk for a vegan option.
  • 1/4 cup melted butter Can substitute with coconut oil for a vegan option.
  • 1 large egg For vegan option, substitute with a flax egg.
  • 1 teaspoon vanilla extract
  • 1 tablespoon baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon cinnamon Consider adding a pinch of nutmeg for extra flavor.
  • 1/2 teaspoon salt
  • 1/2 cup chopped nuts Optional - can use walnuts or pecans.
  • 1/2 cup chocolate chips Optional - can substitute with other mix-ins.

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C) and grease a baking dish.
  2. In a large bowl, mash the ripe bananas until smooth.
  3. Add the milk, melted butter, egg, and vanilla extract to the mashed bananas and mix well.
  4. In another bowl, combine the flour, sugar, brown sugar, baking powder, baking soda, cinnamon, and salt.
  5. Gradually add the dry ingredients to the wet mixture until just combined. Be careful not to overmix.
  6. If desired, fold in chopped nuts or chocolate chips.
  7. Pour the batter into the greased baking dish and spread it evenly.
Baking
  1. Bake for 25-30 minutes or until a toothpick inserted in the center comes out clean.
  2. Allow the rolls to cool slightly before cutting them into squares or rolls.
