  • 2 pieces ripe bananas, mashed The riper, the better for sweetness.
  • 1/2 cup melted butter
  • 1 cup brown sugar (packed)
  • 1 large egg Can substitute with a flax egg for vegan option.
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 cup all-purpose flour Whole wheat flour can be substituted.
  • 1/2 cup cocoa powder
  • 1/2 cup chocolate chips (optional) Add for more chocolate flavor.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and grease an 8×8-inch baking dish or line it with parchment paper.
  2. In a mixing bowl, combine the mashed bananas and melted butter. Stir until well blended.
  3. Add the brown sugar, egg, and vanilla extract to the banana mixture. Whisk until everything is incorporated.
  4. Sprinkle the baking soda and salt over the mixture, then mix well.
  5. Gradually fold in the flour and cocoa powder using a spatula until just combined. Be careful not to overmix.
  6. If desired, fold in the chocolate chips for an extra chocolatey touch.
  7. Pour the batter into the prepared baking dish and spread it evenly.
Baking
  1. Bake for 20-25 minutes or until a toothpick inserted into the center comes out clean.
  2. Let the brownies cool in the pan for 10 minutes before transferring them to a wire rack to cool completely.

Notes

For best results, use very ripe bananas. Store in an airtight container for 3-4 days at room temperature or freeze for up to two months.
