Preparation
- Preheat your oven to 350°F (175°C).
- In a mixing bowl, combine the peanut butter, brown sugar, granulated sugar, egg, vanilla extract, baking soda, and salt. Mix until smooth.
- Fold in the chocolate chunks.
- Drop spoonfuls of dough onto a baking sheet lined with parchment paper, spacing them about 2 inches apart.
Baking
- Bake for 10-12 minutes or until the edges are lightly browned.
- Allow cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
Notes
Store cookies in an airtight container at room temperature for up to a week, or freeze for up to three months. Use quality chocolate for better flavor. Chilling the dough can yield thicker cookies.
