Preparation
- Preheat your oven to 400°F (200°C).
- Wash and dry the sweet potatoes thoroughly.
- Prick the sweet potatoes several times with a fork.
- Rub them with olive oil, and season with salt and pepper.
Cooking
- Place them on a baking sheet and bake for 45-60 minutes, or until tender.
- Remove from the oven, let cool slightly, then slice open and enjoy.
Notes
Store cooled sweet potatoes in an airtight container in the refrigerator for up to four days. They can also be frozen for up to three months. Reheat in the oven at 350°F (175°C).
