  • 8 ounces elbow macaroni
  • 2 tablespoons butter Unsalted preferred
  • 2 tablespoons all-purpose flour For the roux
  • 2 cups milk Can use non-dairy milk
  • 2 cups shredded cheddar cheese Can mix with other cheeses
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon paprika
  • 1/2 cup breadcrumbs Optional for topping

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. Cook the macaroni according to package instructions; drain and set aside.
  3. In a saucepan, melt the butter over medium heat.
  4. Stir in the flour and cook for about 1 minute to create a roux.
  5. Gradually whisk in the milk, ensuring there are no lumps, and bring to a simmer.
  6. Stir in the cheddar cheese, salt, pepper, and paprika until the cheese is melted and the sauce is smooth.
Assembly
  1. Combine the cooked macaroni with the cheese sauce.
  2. Pour the mixture into a greased baking dish.
  3. If using, sprinkle breadcrumbs over the top for a crunchy topping.
Baking
  1. Bake in the preheated oven for 20-25 minutes, or until golden and bubbly.
  2. Serve warm and enjoy!

Notes

For creamier texture, add a splash of heavy cream. To store, refrigerate for 3-4 days or freeze for up to 2 months.
