Preparation
- Preheat your oven to 400°F (200°C). Lightly grease a baking dish with olive oil or non-stick spray.
- Pat the cod fillets dry with paper towels and season both sides with salt and black pepper.
- Place the cod fillets in the prepared baking dish in a single layer.
- In a small mixing bowl, whisk together honey, minced garlic, soy sauce, lemon juice, and olive oil until well combined.
- Pour the honey garlic mixture over the cod fillets, ensuring each piece is well coated.
Baking
- Bake in the preheated oven for 12 to 15 minutes, until the cod is opaque and flakes easily with a fork.
- During the last 2 minutes of baking, spoon some of the sauce from the bottom of the dish over the top of the fish.
Serving
- Remove from the oven, garnish with fresh parsley, and serve with lemon slices on the side.
Notes
Store leftovers in an airtight container in the refrigerator for up to 2 days. Reheat gently to preserve texture. Consider adding vegetables to the baking dish for a complete meal.
