Ingredients
  

For the Cajun Salmon
  • 4 pieces salmon fillets (6 oz each)
  • 2 tablespoons Cajun seasoning
  • 1 tablespoon olive oil
For the Creamy Avocado Lime Sauce
  • 1 piece ripe avocado
  • 1/4 cup sour cream or Greek yogurt
  • 2 tablespoons lime juice
  • 1 clove garlic, minced
  • to taste Salt and pepper
  • to taste Fresh cilantro or parsley for garnish (optional)

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C).
  2. In a small bowl, mix the olive oil and Cajun seasoning until well combined. Rub this mixture generously over each salmon fillet.
  3. Place the seasoned salmon on a lined baking tray and bake in the oven for about 15-18 minutes or until the salmon flakes easily with a fork.
  4. While the salmon is baking, prepare the creamy avocado lime sauce by mashing the avocado in a separate bowl. Add sour cream (or Greek yogurt), lime juice, minced garlic, salt, and pepper. Mix well until smooth and creamy.
  5. Once the salmon is done, remove it from the oven and let it rest for a couple of minutes.
  6. Serve the salmon topped with the creamy avocado lime sauce and garnish with fresh cilantro or parsley if desired.

Notes

For even cooking, ensure all salmon fillets are of uniform thickness. You can replace Cajun seasoning with lemon pepper or a garlic and herb mix if preferred.
