Preparation
- Preheat your oven to 350°F (175°C).
- In a small bowl, combine the cottage cheese, egg, vanilla extract, and optional almond flour, sweetener, and cinnamon or lemon zest. Mix until smooth.
- Gently fold in the blueberries, then pour the mixture into a ramekin or small oven-safe dish.
- If desired, top with extra blueberries for a burst of color and flavor.
Baking
- Bake for 25–28 minutes, until the top is golden and the center is just set.
- Allow it to cool for 5 minutes, then enjoy it warm or chilled.
