Preparation

- In a large mixing bowl, combine cottage cheese, oats, honey, vanilla extract, cinnamon, and salt.
- Add the eggs and mix until well combined.
- Gently fold in the blueberries.
- Pour the mixture into greased ramekins or a baking dish.
Baking
- Bake for 25-30 minutes or until set and golden on top.
- Let cool slightly and serve warm. Optionally, top with additional blueberries or a dollop of yogurt.
Notes
Store leftovers in an airtight container in the fridge for up to 3 days. Reheat in the microwave for quick access to a wholesome breakfast.
