  • 6 large large eggs For hard boiling
  • 1 ripe ripe avocado Ensure it's perfectly ripe for smooth filling
  • 1 tablespoon lime juice Can substitute with lemon juice
  • to taste Salt
  • to taste Pepper
  • for garnish Paprika

Method
 

Preparation
  1. Hard boil the eggs and let them cool.
  2. Peel the eggs and cut them in half lengthwise.
  3. Remove the yolks and place them in a bowl.
  4. Add the avocado, lime juice, salt, and pepper to the bowl and mash until smooth.
  5. Spoon or pipe the mixture back into the egg whites.
  6. Sprinkle with paprika for garnish.
  7. Serve immediately or chill before serving.

Notes

For best results, store in an airtight container in the fridge. They can last for up to 2 days, but are best enjoyed fresh. Use a bit of lime juice on the avocado mixture to prevent browning when preparing in advance.
