Ingredients
  

Wet Ingredients
  • 1 3/4 cups buttermilk
  • 1 large egg (optional) Add moisture and richness
Dry Ingredients
  • 4 1/4 cups all-purpose flour plus more for dusting
  • 3 tablespoons granulated sugar
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 5 tablespoons unsalted butter, cold and cubed Helps make the bread tender
  • 1 cup raisins (optional) Adds sweetness

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C) and grease or line a cast iron skillet or baking pan with parchment paper.
  2. In a mixing bowl, whisk together the buttermilk and egg (if using).
  3. In a large bowl, combine the all-purpose flour, granulated sugar, baking soda, and salt.
  4. Cut in the cold butter until the mixture resembles coarse crumbs.
  5. If desired, stir in the raisins at this point.
  6. Pour the wet ingredients into the dry mix and gently fold until the dough becomes too stiff to stir.
  7. Transfer it to a floured surface and knead lightly for about 30 seconds, just until everything is combined.
  8. Shape the dough into a round loaf and place it in the prepared pan.
  9. Score an X shape on top of the loaf about 1/2 inch deep.
Baking
  1. Bake for 45 to 55 minutes until golden brown and the internal temperature reaches 195°F (90°C).
  2. Let the bread cool for 10 minutes, then transfer it to a wire rack.
  3. Slice it up and serve fresh.

Notes

Store in a bread box or wrapped in a kitchen towel at room temperature for up to 2 days; freeze leftovers wrapped tightly for up to 3 months.
