Preparation
- In a mixing bowl, combine fresh lemon juice, minced garlic, dried oregano, olive oil, salt, and pepper.
- Place the chicken breasts into a resealable plastic bag or container and pour the marinade over the chicken.
- Seal the bag or container and shake gently to coat the chicken evenly with the marinade.
- Marinate in the refrigerator for at least 30 minutes, or up to 4 hours for a stronger flavor.
Cooking
- Preheat the grill or oven.
- Grill or bake the chicken until fully cooked, about 6-7 minutes per side on the grill or 20-25 minutes in the oven at 400°F (200°C).
- Remove from heat and let rest for a few minutes before slicing and serving.
Notes
Serve with a Greek salad, rice pilaf, or pita bread. Can also be added to wraps or grain bowls. For leftovers, store in the refrigerator for up to 3 days.
