Ingredients
  

For the Marinade
  • 1/2 cup Fresh lemon juice Use fresh lemon juice for best flavor.
  • 3 cloves Garlic, minced
  • 2 tablespoons Dried oregano
  • 1/4 cup Olive oil
  • 1 teaspoon Salt
  • 1/2 teaspoon Pepper
For the Chicken
  • 4 pieces Chicken breasts Can substitute with thighs or drumsticks.

Method
 

Preparation
  1. In a mixing bowl, combine fresh lemon juice, minced garlic, dried oregano, olive oil, salt, and pepper.
  2. Place the chicken breasts into a resealable plastic bag or container and pour the marinade over the chicken.
  3. Seal the bag or container and shake gently to coat the chicken evenly with the marinade.
  4. Marinate in the refrigerator for at least 30 minutes, or up to 4 hours for a stronger flavor.
Cooking
  1. Preheat the grill or oven.
  2. Grill or bake the chicken until fully cooked, about 6-7 minutes per side on the grill or 20-25 minutes in the oven at 400°F (200°C).
  3. Remove from heat and let rest for a few minutes before slicing and serving.

Notes

Serve with a Greek salad, rice pilaf, or pita bread. Can also be added to wraps or grain bowls. For leftovers, store in the refrigerator for up to 3 days.
