  • 2 cups Vegetables (bell peppers, carrots, onions) Any combination of vegetables works.
  • 1 cup Protein (chicken, tofu, or shrimp) Choose based on dietary preferences.
  • 1 tbsp Sesame oil Adds a distinct flavor to the dish.
  • 2 cloves Garlic Minced.
  • 1 tsp Ginger Minced or grated.
  • 1 tbsp Chili sauce or flakes Optional for heat.
  • 2 tbsp Green onions For garnish.

Method
 

Preparation
  1. Cook the rice noodles according to the package instructions and set aside.
  2. In a large skillet or wok, heat sesame oil over medium heat.
  3. Add minced garlic and ginger, sautéing until fragrant.
Cooking
  1. Toss in your choice of protein and cook until fully cooked.
  2. Add in the vegetables and stir-fry until they are tender-crisp.
  3. Stir in the cooked rice noodles and soy sauce, mixing well to combine.
  4. Adjust seasoning with chili sauce or flakes if desired.
  5. Serve hot, garnished with green onions.

Notes

Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat in a skillet over medium heat with a splash of water or soy sauce.
