  • 1 tablespoon sesame oil Can be substituted with olive oil if allergic.
  • 1 tablespoon sugar Sweetness can be adjusted to taste.
  • 1 tablespoon sesame seeds Add for texture and flavor.
  • 2 stalks green onions, chopped Add at the end for freshness.
  • to taste Salt Season according to preference.

Method
 

Preparation
  1. Slice the cucumbers thinly and place them in a bowl.
  2. In a separate bowl, mix rice vinegar, soy sauce, sesame oil, and sugar until the sugar dissolves.
  3. Pour the dressing over the cucumbers and toss to combine.
  4. Add sesame seeds and green onions, mixing well.
  5. Season with salt to taste.
  6. Let the salad sit for at least 15 minutes before serving to allow the flavors to meld.

Notes

For extra flavor, let the salad marinate for up to an hour in the refrigerator before serving. Can add red pepper flakes for heat. This dish can also be stored in an airtight container in the refrigerator for up to 2 days.
