Dressing Ingredients
  • 3 tablespoons Greek yogurt Adjust for creaminess preference.
  • 2 tablespoons honey
  • 1 tablespoon Dijon mustard Adds mild spiciness.
  • 1 tablespoon lemon juice
  • 1 tablespoon olive oil
  • 1/4 teaspoon garlic powder Enhances overall flavor.

Method
 

Preparation
  1. Drain and rinse the chickpeas thoroughly and add them to a large salad bowl.
  2. Dice the apples and thinly slice the red onion.
  3. Add the diced apples, crumbled feta cheese, chopped walnuts, mixed salad greens, and sliced red onion to the bowl with the chickpeas.
Dressing Preparation
  1. In a small bowl, whisk together the Greek yogurt, honey, Dijon mustard, lemon juice, olive oil, garlic powder, salt, and black pepper until smooth.
Assembly
  1. Pour the creamy honey mustard dressing over the salad.
  2. Toss gently until all ingredients are evenly coated.
  3. Taste and adjust seasoning if needed.
  4. Serve immediately or refrigerate for 15 minutes before serving for enhanced flavor.

Notes

Store in an airtight container in the refrigerator for up to 2 days. To prevent browning of apples, toss in lemon juice before mixing.
