Preparation
- Preheat your oven to 350°F (175°C) and generously grease a 9×9 inch baking dish.
- In a large mixing bowl, whisk together cottage cheese, eggs, maple syrup, and vanilla extract for about 30 seconds until well combined.
- Fold in oats (or almond flour), cinnamon, and baking powder. Stir gently until just combined, then let the batter rest for 3-4 minutes.
- Gently fold in the diced apples until evenly distributed in the batter.
Baking
- Pour the mixture into your prepared baking dish. Bake in the preheated oven for 35-40 minutes until golden brown and a toothpick comes out clean.
- Allow the bake to cool for about 10 minutes before slicing into 9 squares.
Notes
Serve warm or at room temperature. Pairs well with Greek yogurt or additional maple syrup.
