Ingredients
  

Wet Ingredients
  • 2 cups cottage cheese (full-fat preferred, drain if very wet)
  • 3 large eggs
  • 1/4 cup maple syrup or honey
  • 1 teaspoon vanilla extract
Dry Ingredients
  • 1/2 cup rolled oats or almond flour
  • 1 1/2 teaspoons ground cinnamon
  • 1 teaspoon baking powder
Fruits
  • 1 large apple (peeled and finely diced, Honeycrisp or Gala)

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and generously grease a 9×9 inch baking dish.
  2. In a large mixing bowl, whisk together cottage cheese, eggs, maple syrup, and vanilla extract for about 30 seconds until well combined.
  3. Fold in oats (or almond flour), cinnamon, and baking powder. Stir gently until just combined, then let the batter rest for 3-4 minutes.
  4. Gently fold in the diced apples until evenly distributed in the batter.
Baking
  1. Pour the mixture into your prepared baking dish. Bake in the preheated oven for 35-40 minutes until golden brown and a toothpick comes out clean.
  2. Allow the bake to cool for about 10 minutes before slicing into 9 squares.

Notes

Serve warm or at room temperature. Pairs well with Greek yogurt or additional maple syrup.
