  • 2 cups Cottage Cheese
  • 4 large Eggs
  • 2 cups Apple, diced
  • 1 cup Rolled Oats or Almond Flour Use almond flour for a gluten-free option.
  • 1/4 cup Maple Syrup or Honey Adjust sweetener based on preference.
  • 1 teaspoon Ground Cinnamon
  • 1 teaspoon Vanilla Extract
  • 1 teaspoon Baking Powder

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, combine the cottage cheese and eggs. Whisk until smooth.
  3. Dice the apples into small pieces and fold them into the mixture.
  4. Stir in the rolled oats (or almond flour), maple syrup (or honey), ground cinnamon, vanilla extract, and baking powder. Mix until everything is well combined.
  5. Pour the mixture into a greased 9x9 inch baking dish, spreading it evenly.
Baking
  1. Bake in the preheated oven for 35-40 minutes, or until the top is golden and a toothpick inserted in the center comes out clean.
  2. Let it cool for a few minutes before slicing and serving.

Notes

For extra sweetness, consider adding raisins or dried cranberries. Leftovers can be stored in an airtight container for up to 5 days. Can be frozen up to 3 months.
