Ingredients
  

Dry Ingredients
  • 2 cups all-purpose flour Spoon and level for accurate measurement.
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon Adjust to taste.
Wet Ingredients
  • 1/2 cup unsalted butter, softened At room temperature.
  • 1 cup granulated sugar
  • 2 large eggs At room temperature.
  • 1 teaspoon vanilla extract
  • 1/2 cup plain Greek yogurt or sour cream
  • 2 cups apples, peeled and diced About 2 medium apples.
  • 1/2 cup chopped walnuts or pecans Optional.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C). Lightly grease a 9x5-inch loaf pan.
  2. In a medium bowl, whisk together the flour, baking soda, salt, and cinnamon until well combined.
  3. In a large mixing bowl, beat the softened butter and granulated sugar together until creamy for about 2-3 minutes.
  4. Add the eggs one at a time, beating well after each addition. Stir in the vanilla extract and Greek yogurt until smooth.
Mixing
  1. Gradually add the dry ingredients to the wet ingredients, mixing on low speed just until the flour disappears. Do not overmix.
  2. Gently fold in the diced apples and chopped nuts with a spatula.
Baking
  1. Pour the batter into the prepared loaf pan and smooth the top.
  2. Bake for 55 to 65 minutes, checking with a toothpick to see if it comes out clean.
  3. Let the bread cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.

Notes

Serve warm with butter or drizzle with honey. Store in an airtight container or freeze for longer storage. Choose firm, tart apples for the best flavor.
