Preparation
- Preheat your oven to 350°F (175°C). Lightly grease a 9x5-inch loaf pan.
- In a medium bowl, whisk together the flour, baking soda, salt, and cinnamon until well combined.
- In a large mixing bowl, beat the softened butter and granulated sugar together until creamy for about 2-3 minutes.
- Add the eggs one at a time, beating well after each addition. Stir in the vanilla extract and Greek yogurt until smooth.
Mixing
- Gradually add the dry ingredients to the wet ingredients, mixing on low speed just until the flour disappears. Do not overmix.
- Gently fold in the diced apples and chopped nuts with a spatula.
Baking
- Pour the batter into the prepared loaf pan and smooth the top.
- Bake for 55 to 65 minutes, checking with a toothpick to see if it comes out clean.
- Let the bread cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
