Ingredients
  

For the beef mixture
  • 1 pound ground beef Can substitute with ground turkey or chicken.
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 can (15 ounces) diced tomatoes, undrained
  • 1 can (15 ounces) corn, drained
For the biscuit topping
  • 1 cup shredded cheddar cheese Can experiment with different cheeses.
  • 1/2 cup milk
  • 1/4 cup all-purpose flour
  • 1/4 cup butter, melted
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Method
 

Preparation
  1. Preheat your oven to 375°F (190°C).
  2. In a large skillet, brown the ground beef over medium heat. Add the chopped onion and minced garlic, cooking until the onion becomes translucent. Drain any excess grease.
  3. Mix in the diced tomatoes and corn; cook for about 5 minutes, stirring occasionally.
Biscuit Topping
  1. In a separate bowl, whisk together milk, flour, melted butter, baking powder, salt, and black pepper until smooth.
  2. Pour the biscuit mixture over the beef mixture in the skillet and spread it evenly.
  3. Top with shredded cheddar cheese.
Baking
  1. Bake in the preheated oven for 20-25 minutes, or until the biscuit topping is golden brown.

Notes

This dish can be served alone or with a simple green salad. Pair with garlic bread for an indulgent option. Leftovers can be stored in the fridge for 3-4 days or frozen for up to 3 months.
