Ingredients

Dry Ingredients
  • 2 cups Old-Fashioned Rolled Oats (not quick oats) Use rolled oats for the best texture.
  • 2 scoops Vanilla Protein Powder (whey or plant-based) Choose your preferred protein option.
  • 2 tablespoons Chia Seeds Adds nutritional value and thickens the mixture.
  • 1 teaspoon Pumpkin Pie Spice Can substitute with individual spices if desired.
  • 1/2 teaspoon Ground Cinnamon
  • 1/4 teaspoon Salt Enhances the flavor.
Wet Ingredients
  • 1 cup Pure Pumpkin Puree (not pumpkin pie filling) Provides creamy texture and flavor.
  • 1/2 cup Plain Greek Yogurt Use non-dairy yogurt for a vegan option.
  • 2 cups Unsweetened Milk (almond, soy, or cow’s milk) Choose your preferred milk.
  • 2 tablespoons Maple Syrup or Honey Adjust sweetness to taste.
  • 1 teaspoon Vanilla Extract

Method

Preparation
  1. In a large mixing bowl, whisk together the rolled oats, protein powder, chia seeds, pumpkin pie spice, cinnamon, and salt until there are no clumps of protein powder.
  2. Add the pumpkin puree, Greek yogurt, milk, maple syrup, and vanilla extract to the dry ingredients.
  3. Stir the mixture vigorously with a large spoon or spatula until every oat is coated and the pumpkin is fully incorporated.
  4. Line up four to five glass jars (mason jars work perfectly). Distribute the mixture evenly among the jars, leaving a little room at the top for toppings.
  5. Seal the jars with their lids and place them in the refrigerator.
  6. Let the oats soak for at least 6 hours, or ideally overnight, to reach the perfect creamy consistency.
Serving
  1. Before eating, give the oats a quick stir. If they are too thick, add a tiny splash of milk to loosen them up.
  2. Enjoy your High Protein Pumpkin Overnight Oats chilled straight from the jar with optional toppings.

Notes

Store prepared jars in the refrigerator for up to 5 days. The oats will continue to soak and develop flavor.
